Ingredients
- 1 cup of piled penne pasta is 250 grams.
- 7 cups water.
- one-half teaspoon salt, or more if needed.
For Make pasta masala

1/2 cup of finely sliced onions or spring onions.
- 1/2 tablespoon ginger garlic Copy.
- 1 cup of firmly packed, finely chopped tomatoes 3 large, finely chopped tomatoes.
- 1/2 a teaspoon of powdered turmeric.
- 1/2 of cumin powder.
- 1/2 tablespoon of powdered black pepper.
- 1 teaspoon red chili powder from Kashmir.
- 1 tablespoon powdered coriander.
- 1 cup carrots, cut finely, or 1/4 cup carrots, grated.
- 1 cup frozen or fresh green peas.
- 2 cup of coarsely chopped bell pepper or capsicum.
- Add 1 cup of water or as needed.
- Twice as many finely chopped coriander leaves.
- 2 tablespoons of finely chopped spring onions and optional greens.
- ¼ teaspoon of Garam Masala salt, if needed.
- For garnish, use 2-3 tablespoons of shredded cheddar cheese or vegetarian parmesan cheese.
Step 1: Cook Pasta
4. Cook till the pasta becomes al dente. You can also cook it more, if you want.
5. After boiled pasta remove water.
Step 2: Make pasta masala
7. You may make the masala foundation while the pasta cooks. First, finely slice the carrot, capsicum, and two medium-to-large tomatoes.
Onions can also be used in place of the spring onions. Ensure that the carrots are finely chopped. If not, cooking them might take a very long time. Another option is to grate the carrots.
8. Next, preheat a pan with two teaspoons of oil. Add 1/4 cup of finely chopped onions or spring onions. Cook until the onions are transparent.
9. Next, include ½ tsp of ginger-garlic paste.
10. Sauté the garlic and ginger until the raw smell disappears.
11. Next, add one cup of finely chopped tomatoes that are firmly packed.
12. Stir and cook over low to medium heat until the tomatoes soften and are pulpy.
13. Next, include the ground spices listed below:
- 1/2 teaspoon of powdered turmeric.
- 1/2 of cumin powder.
- 1/2 tsp of powdered black pepper.
- ¼ to ½ teaspoon red chili powder from Kashmir.
- 1/4 tablespoon powdered coriander.
15. Add ⅓ cup finely chopped carrots, ¼ cup chopped green peas, and ¼ cup chopped bell pepper or capsicum.
You may also use vegetables that have already been steamed or boiled rather than boiling them.
24. Then add ¼ teaspoon pasta masala powder.
25. Mix well and heat in only 2 -3 min.
